A small group of craftsmen: "Les Artisans Conserviers de Dordogne ™", registered for the Trade Chambers of Dordogne, decided on the principle of voluntarism, the establishment of a process of excellence for taste and flavor. This involves them significantly and means for the consumer, compliance with the taste and flavors. To formalize this commitment, the Artisans Conserviers de Dordogne have established the following quality charter
:
Article I
Each member "Artisan Conservier de Dordogne" must be registered in the register of trades of the Dordogne and benefit from a practice of more than 5 years in his craft. Article II
To continuously earn the name "Gourmet Carver" and thus fulfill the purpose of this charter, each "Artisan Conservier de Dordogne" is committed to selecting and cooking products in the most scrupulous respect for the expertise and craft traditions of the Perigord. Article III
To achieve a high level of taste for the true taste and authentic flavors, "Artisan Conservier de Dordogne" undertake to submit annual production of foie gras dishes or to taste tests by a panel of discerning consumers under the authority of a universally recognized and independent organization: the "Centre Technique de la Conservation
des Produits Agricoles".
Article IV
The results of the various tests will be given to each and artisans will be comments from the tasting test. Each craftsman concerned undertakes to take into account any adjustments desired by consumers who participated in the taste tests planned in section 3 of this charter.
Article V
Without derogating from Article II of this Charter, each artisan prevails to regularly search for new creations in the field of flavors and combination of tastes. These creations will be tested, as defined in Article III of this charter.
Article VI
Each member of "Artisan Conservier de Dordogne" not complying with the requirements of this charter or the recommendations made by the expert laboratory after taste tests of products may be subject to permanent exclusion.
